Kritharaki with Vegetables (Greek Orzo)

[Kritharaki with vegetables, served with a glass of a crisp chardonnay]

October is comming and it’s getting colder indeed. Trees are turning their colours from deep green to dark yellow, brilliant orange and bright red. Autumn is my favourite season. I am less craving for fresh salad and light dishes. I am craving for comfort food. Kritharaki or greek orzo with vegetables is a perfect remedy.

I cook kritharaki like risotto with courgette, aubergine, shallots, tomatoes, herbs (e. g. dried rosemary), white wine and vegetable broth. Serve it warm with or without meat and a glas of white wine.

INGREDIENTS
Serve: 2

100 g aubergine, diced
100 g courgette/zucchini, diced
2 small schalotte, diced
5 small tomatoes, diced
2 EL extra virgin olive oil
150 g Kritharaki / Greek orzo
0,5 l vegetable stock
2 tsp tomato purée
2 tbsp dried rosemary
sea salt
fresh grounded pepper

With fried chicken strips
400 g chicken breast filet, sliced in stripes
1-2 tbsp extra virgin olive oil
sea salt
fresh grounded pepper

INSTRUCTIONS

  1. Heat the olive oil in a pot and roast gently the diced schalotte. Add the aubergine and courgette, sauté for 5 min.
  2. Add kritharaki and sauté for another 2-3 min.
  3. Add the diced tomatoes  and tomato purée until it come to a boil.
  4. Cover the surface with the vegetable stock (about one third) and add the dried rosemary.
  5. Cook over a medium-high heat until the kritharaki absorbed the stock.
  6. Add another one third of the stock and repeat until the kritharaki is soft and creamy. Remove the pot from the heat.
  7. Serve it hot.

(with fried chicken strips)

  1. Wash and dry off the chicken filet.
  2. Sliced in stripes and spice with salt and pepper
  3. Do the instructions from 1-6 of kritharaki
  4. Heat the olive oil in a pan and fried the chicken stripes until golden brown
  5. Serve the chicken strips on top of the kritharaki
