Simple Brioche


[Serving suggestion: Brioche with butter and a glass of milk]

Can you smell the scent of homemade brioche in my apartment? There is something about viennoiseries. It’s the scent of leavened dough when it comes out of the oven.

I’ve always wanted to bake a french brioche and I’ve finally tried a friends recipe. A very simple recipe and easy to follow.

Serve: 1 loaf

For the dough:

12 g dry yeast (1 cube)

3 tbsp. warm water

4 eggs

125 ml warm milk

535 g flour (extra flour for kneading)

65 g sugar (plus 1 pack vanilla sugar)

1 3/4 tsp salt

180 g butter, cold, diced


For the glaze:

1 egg, shifty

1 tsp. water



  1. In a bowl: mix flour with yeast, make hole in the middle.
  2. Add warm milk and mix with the tip of your fingers.
  3. Add sugar and salt, than add butter, piece by piece.
  4. Add the eggs, one by one, mixing well between each.
  5. Work the dough until it is ealstic and detaches from your fingers more easily.
  6. Cover and let rest in a warm place for two hours.
  7. Work the dough again for 10 min. and divide in 3 parts. Place them in a greased rectangular mold and cover.
  8. Let the dough rise for an hour again.
  9. Preheat the oven at 200°C.
  10. Brush the brioche with the egg mix.
  11. Place in the oven to bake for 10 min then reduce the heat to 180°C and bake for about 20-30 min.
  12. Remove the loaf and let cool on a rack.
